In the Kelvin timeline they have auto-expanding seatbelts that can go down when there’s an emergency
They do actually they’re just not used often and more often then not in shuttlecraft.
And as a backup plan, real Starfleet officers know how to start a fire using the rocks coming out of the exploding console or falling from the ceiling.
